A pretty boutique winery, in the heart of Chianti Classico, in between Greve in Chianti and Panzano; Savignola was already an etruscan settlement,The Fabbri family bought the estate in 1780 and Paolina made this small winery popular by merging its name with that of the settlement.
During the last twenty years, his nephew Carlo and his daughter Ludovica have renovated the vineyards and built a technologically advanced cellar. In 2014 the Caviezel family became an active partner of the company in order to give continuity to this ambitious project and to maintain the high standards of quality and authenticity.
Today the winery has six hectares of vineyards and one of olive grove.
The production is around 10.000 bottles a year.
COLOUR: a deep ruby red
NOSE: slowly releases intense notes of violet and rose, excellent aging capacity.
TASTE: concentrated and with a good structure, it presents a sweet tasting entry. The balance between acidity and tannin nicely lengthens the persistence and drinkability of the Chianti Classico.
FOOD PAIRING: Bruschette with tomatoes, tuscan crostini, cold cuts, cheese, roasted meats.
